3 cups Cheez-It crackers
2 cups panko bread crumbs
3 tablespoons cornstarch
2 tablespoons flour
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
12 chicken legs
Cooking spray
Heat the oven to 400 degrees F.
Place the Cheez-Its into a food processor, and pulse until ground into crumbs the size of the panko bread crumbs.
In a large, zip-top bag, combine the Cheez-It crumbs, panko bread crumbs, cornstarch, flour and spices.
Put two chicken legs into the bag, and shake it until the drumsticks are well-coated.
Arrange the coated chicken legs on a wire rack sprayed with cooking spray and set over an aluminum foil-lined baking sheet.
Repeat until all of the legs are coated.
Bake for 30 to 35 minutes, until the chicken is crispy.
