I've been staying inside with this cold temps but I do need to go out tomorrow morning and I'm not looking forward to it.
Lucie my father spent 4 years in a nursing home and I found out from the kitchen staff that they order frozen premade meals from a large distributor and they mainly go with foods that freeze and thaw out well. They also had a budget for fresh veggies and fruit but in Wis during the winter, fresh veggie and fruit is mainly out of a can.
Also the kitchen staff stated that when there's quite a few staff members sick, they pull out of the freezer whatever is the easiest to heat up and with the lack of staff, they don't always have time to add a fruit or veggie to a meal.
My father was in a small nursing home and I think there was normally only 4 people baking, plating and doing cleanup so when a couple staff members were sick, it put quite a strain on the two remaining staff members to prepare the meals, get them out to the residents and to clean up afterwards.
