3 pieces Frozen or fresh Cod pieces about 1/2 inch thick, thawed if frozen
13 Ritz crackers, coarsely crushed
3 T. finely shredded cheddar cheese
1 1/2 T. butter, melted
Preheat oven to 400 degrees.
Put thawed Cod (blotted dry) on a shallow metal pan sprayed with light olive oil spray. Give the Cod a slight spray of oil on the top of each piece.
In a bowl, mix crushed Ritz crackers, shredded cheese and melted butter. Mix to combine.
Season fish with salt and pepper. With a spoon, top fish with crumbs and press down to make crumbs stick. You can really press and form these crumbs on top to make a uniform, thick layer of crumbs. Give the crumbs a slight spray of oil and put in the preheated oven.
Bake 20 minutes or until crumbs are nicely browned and fish flakes easily with a fork.
Remove with spatula and serve.
