Put water in a saucepan deep enough to cover eggs by 1 inch. Add 1 tsp. baking soda (makes peeling easier).
Heat to boiling. Carefully slip eggs into water with a spoon.
Boil 1 minute, then cover, turn off heat and let set for 15 minutes.
Drain and plunge eggs into ice water.
Peel and enjoy.
