Pecan Filling
1 cup brown sugar
1 cup dark corn syrup
2 tbsp unsalted butter, melted
½ tsp salt
1 cup Diamond Pecan Halves
Biscuit
2 cups all purpose flour
1/4 cup white sugar
2 tsp baking powder
¼ tsp baking soda
½ cup cold unsalted butter, cut into small cubes
½ cup buttermilk
Instructions:
Preheat the oven to 350F.
Spray a large, deep dish pie pan with nonstick cooking spray and set aside.
In a large bowl, mix the brown sugar, corn syrup, melted butter, salt, and pecan halves.
To a food processor, add the flour, white sugar, baking powder, and baking soda. Pulse to combine.
Add cold butter cubes to the food processor, pulse until the mixture is similar to coarse sand.
Gradually add buttermilk to the food processor, using short pulses to combine.
Add flour mixture to the prepared pie dish, then pour pecan mixture on top.
Bake for 25-30 minutes until the crust is golden brown. Remove from the oven and let cool for 20-30 minutes. Serve with a scoop of vanilla ice cream.
