Warm, saucy, and loaded with melty cheese, this easy enchilada bake is the kind of family dinner that brings everyone back for seconds.
Ingredients:
1 lb ground beef
8 flour tortillas
1 small onion, diced
2 cloves garlic, minced
1 can (10 oz) red enchilada sauce
1 can (15 oz) refried beans, optional
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 tsp chili powder
1 tsp cumin
½ tsp paprika
½ tsp salt
½ tsp black pepper
Fresh cilantro or parsley, chopped
Instructions:
Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish.
Cook ground beef and onion in a skillet over medium heat until beef is browned. Drain excess grease. (6–8 minutes)
Stir in garlic, chili powder, cumin, paprika, salt, pepper, and ¼ cup enchilada sauce. Cook for 1 minute.
Spread a little enchilada sauce in the baking dish.
Fill each tortilla with beef mixture, beans if using, and a sprinkle of cheese. Roll tightly and place seam-side down in the dish. (8 minutes)
Pour remaining enchilada sauce over the top and sprinkle with cheddar and Monterey Jack.
Bake uncovered until bubbly and cheese is melted. (20–25 minutes)
Garnish with cilantro or parsley and serve warm.
Serving Suggestion: Serve with Spanish rice, sour cream, or a simple salad. Refrigerate leftovers for up to 4 days.
