- 4–6 bone-in pork chops (about 1-inch thick)
- 1˝ lbs baby potatoes, halved
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ˝ cup shredded Parmesan cheese
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Fresh thyme and parsley for garnish
Sear chops in olive oil and butter until golden. Set aside. Sauté onion and garlic in the same pan. Add broth, cream, Parmesan, Dijon, and Italian seasoning — stir until smooth. Add potatoes and nestle chops back in. Cover and bake at 375°F for 35–40 minutes until chops are cooked through and potatoes are tender.
