Your new favorite lunch!
Makes 6
Ingredients:
• 1 lb ground beef or turkey
• ¼ cup fresh parsley
• ⅓ cup grated parmigiano reggiano
• 2 garlic cloves finely minced or grated
• ½ tsp salt
• ¼ tsp pepper
• ¼ tsp red pepper flakes (optional)
• ¾ tsp onion powder
• 6 small flour tortillas
• 1 cup shredded mozzarella
• 1½ cups marinara sauce
Instructions:
• To a large bowl add the ground meat, parsley, grated parm, garlic, salt, pepper, red pepper flakes (opt
ional) and onion powder. Use your hands to mix ingredients together then divide into 6 balls
• Press and flatten the meatballs into the tortillas. The meat layer should be very thin and almost meet the edge of the tortilla
• Heat a non-stick skillet to medium-high. Place each meatball tortilla, meat-side down onto the hot pan. Cook for about 2 to 3 minutes, flip, add a few tbsp of mozzarella and cook for 1 minute more. Then fold the tortilla in half, press for 30 seconds, flip once more, press for 30 seconds and remove from heat
