Ingredients (Serves 4)
Chicken & Veggies
• 2 lbs. boneless chicken thighs, chopped
• ½ tbsp cornstarch
• 2 tsp black pepper
• Salt to taste
• 1 yellow onion, diced
• 2 cups celery, chopped
Sauce
• ¾ cup chicken stock
• ¼ cup soy sauce
• 3 tbsp white vinegar
• 2 tbsp olive oil
• ½ tbsp cornstarch
• ½ tbsp black pepper
For Serving
• 1½ cups jasmine rice (uncooked)
👩🍳 How to Make It
1️⃣ Cook rice according to package instructions and set aside.
2️⃣ Toss chicken with cornstarch, black pepper, and salt until coated.
3️⃣ In a pan, sauté onion and celery until softened.
4️⃣ Add chicken and cook until halfway done.
5️⃣ In a bowl, whisk all sauce ingredients together.
6️⃣ Pour sauce into the pan and stir well.
7️⃣ Let it simmer, then reduce heat and cook until chicken is fully done and sauce thickens.
8️⃣ Serve hot over rice and enjoy 😋
💡 Tips
✔ Use chicken breast if you want it leaner
✔ Add bell peppers for extra crunch
✔ Adjust black pepper for more or less heat
✔ Swap rice for quinoa or cauliflower rice for a lighter option
