Ingredients
• 6 cups corn (fresh or thawed frozen)
• 1 cup feta cheese, crumbled
• ½ cup red onion, diced
• ¼ cup fresh parsley, chopped
Dressing
• ⅓ cup mayonnaise
• ¼ cup sour cream
• 2 tbsp lime juice
• 1 tsp garlic powder
• Salt & pepper to taste
👩🍳 How to Make It
1️⃣ If using fresh corn, cut kernels off the cob. (Optional: sauté for 3–4 mins for extra flavor.)
2️⃣ In a small bowl, whisk mayo, sour cream, lime juice, garlic powder, salt, and pepper.
3️⃣ In a large bowl, combine corn, feta, red onion, and parsley.
4️⃣ Pour dressing over and toss until well coated.
5️⃣ Chill for at least 30 minutes before serving.
6️⃣ Garnish with extra parsley and enjoy 😋
