A classic comfort dish that's as easy as it is delicious — this creamy, cheesy baked chicken and rice casserole is perfect for busy nights. It’s called “Forgotten” because once it’s in the oven, you can forget about it until it’s ready!
Ingredients:
4–5 boneless, skinless chicken breasts
2 cups long-grain white rice (uncooked)
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
2 ˝ cups chicken broth
1 cup shredded cheddar cheese (plus extra for topping)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley
˝ tsp paprika
Salt and pepper to taste
Non-stick cooking spray
Instructions:
Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
Mix the base: In a large mixing bowl, combine the rice, both cans of soup, chicken broth, garlic powder, onion powder, and 1 cup of shredded cheddar cheese. Stir until well mixed.
Assemble the dish: Pour the rice mixture evenly into the prepared baking dish.
Add chicken: Place the chicken breasts directly on top of the rice mixture. Season the chicken with salt, pepper, paprika, and parsley.
Top with cheese: Sprinkle a little extra shredded cheddar on top of the chicken for added flavor and browning.
Cover and bake: Tightly cover the dish with aluminum foil. Bake for 1 hour and 15 minutes. Do not uncover during baking.
Uncover and finish baking: After 75 minutes, remove the foil and bake for an additional 10–15 minutes, or until the chicken is golden and the rice is fully tender.
Serve hot: Let the dish rest for 5 minutes before serving. Garnish with extra parsley if desired.
