This cheesy Mexican White Trash Casserole is one of those fun, crowd-pleasing dinners my family asks for all the time. The layers of seasoned beef, creamy sauce, melty cheese, and crunchy nacho chips make my kids say, “This tastes like taco night and nachos combined!” Easy, bold, and absolutely irresistible.
Ingredients:
1 lb. ground beef
1 small onion, diced
1 packet taco seasoning (1 oz)
1 can Rotel (10 oz, undrained)
1 can cream of chicken or cream of mushroom soup (10.5 oz)
1 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
2 cups shredded cheddar or Mexican blend cheese
4–5 cups nacho tortilla chips (Doritos or plain nacho chips), lightly crushed
Optional toppings: jalapeños, cilantro, diced tomatoes, green onions.
Instructions:
Preheat oven to 350°F and lightly grease a 9x13 baking dish.
In a skillet, cook ground beef and onion until the beef is browned. Drain if needed.
Stir in taco seasoning, Rotel, soup, sour cream, garlic powder, paprika, and pepper. Let it warm through for 2–3 minutes.
Spread half the crushed nacho chips in the bottom of the baking dish.
Spoon the beef mixture evenly over the chips.
Sprinkle half the cheese on top.
Add another layer of crushed chips and finish with the remaining cheese.
Bake for 20–25 minutes, until hot, bubbly, and golden.
Add optional toppings before serving.
