Ingredients:
Mixed seafood (1 lb / 450 g, such as shrimp, crab, and white fish, chopped)
Heavy cream (1 cup)
Sour cream (1/2 cup)
Shredded cheddar cheese (1 cup)
Butter (2 tbsp)
Onion, finely chopped (1 small)
Garlic, minced (2 cloves)
All-purpose flour (2 tbsp)
Old Bay seasoning (1 tsp)
Salt and black pepper, to taste
Lemon juice (1 tsp)
Fresh parsley, chopped (2 tbsp)
For the Crust/Topping
All-purpose flour (1 1/2 cups)
Cold butter, cubed (1/2 cup)
Shredded cheddar cheese (1/4 cup)
Baking powder (1/2 tsp)
Salt (1/4 tsp)
Cold milk (2–3 tbsp)
How to Make It
1. Prepare the filling: In a skillet, melt the butter over medium heat. Sauté the onion and garlic for 3–4 minutes until soft. Sprinkle the flour over the mixture and stir to form a roux; cook 1 minute. Whisk in the heavy cream and sour cream. Add the cheddar cheese, Old Bay, salt, and pepper; cook until the sauce thickens. Stir in the seafood and cook 2–3 minutes, just until opaque. Add lemon juice and parsley. Remove from heat.
2. Prepare the crust: In a bowl, mix together the flour, baking powder, salt, and shredded cheddar. Cut in the cold butter until coarse crumbs form. Add cold milk a little at a time until a soft dough comes together. Pat or roll the dough to fit the top of your pie dish.
3. Assemble and bake: Preheat the oven to 375°F. Pour the seafood filling into a greased pie dish. Place the crust on top and lightly seal the edges. Cut small slits for ventilation. Bake 25–30 minutes, until the crust is golden and the filling bubbles.
4. Serve: Let the pie rest 5 minutes before slicing. Garnish with parsley and a squeeze of lemon if you like.
