Golden, cheesy, protein-packed quiche perfect for meal prep or brunch.
Servings: 3-4
Ingredients:
• 200g/ 7 oz. fresh salmon (cut into cubes)
• 1 medium zucchini (sliced or diced)
• 100g/ 3.5 oz. feta cheese (or Boursin for creamier flavor)
• 4 large eggs
• 150ml/ 2/3C unsweetened almond milk (or light cream if preferred)
• 1 tbsp olive oil
• Salt, pepper, garlic powder, Italian herbs to taste
How to Make It:
1. Preheat oven to 350°F (180°C). Lightly grease a quiche dish.
2. Heat olive oil in a pan. Sauté zucchini until soft. Set aside.
3. Dice salmon into small cubes.
4. In a mixing bowl, whisk eggs, almond milk, salt, pepper, garlic powder, and herbs.
5. Layer zucchini and salmon into your dish. Sprinkle feta (or Boursin).
6. Pour egg mixture evenly over the top.
7. Bake for 35–40 minutes, until golden brown and set in the middle.
8. Let cool slightly before slicing.
What You Can Swap:
• No salmon? Use tuna, smoked trout, or chicken breast.
• No zucchini? Try spinach, broccoli, asparagus, leeks or mushrooms.
• Cheese lover? Swap feta for mozzarella or goat cheese.
