Low carb, gluten-free, and meal-prep friendly.
✅Makes 8 slices
Per Slice: ~210 calories | 3g carbs | 14g protein | 16g fat
Ingredients:
• ½ tablespoon olive oil or avocado oil (for greasing)
• 6 slices cooked bacon, crumbled
• 10 large eggs
• ½ tablespoon dry mustard powder
• Salt and black pepper to taste
• 1 cup unsweetened milk (dairy, almond, or coconut)
• 1 cup plain Greek yogurt (or plain coconut yogurt)
• 2 big handfuls baby spinach, roughly chopped
• ½ cup chopped scallions (green onions)
• ½ cup shredded white cheddar cheese
✅ Instructions:
1. Preheat Oven:
Set oven to 350°F (175°C). Grease a standard pie dish (9-inch) with oil.
2. Mix the Eggs:
In a large mixing bowl, whisk the eggs with mustard powder, salt, and black pepper until light and fluffy.
3. Add Creamy Ingredients & Veggies:
Stir in the milk, yogurt, spinach, and scallions. Mix gently until everything is evenly combined.
4. Assemble the Quiche:
Pour the egg mixture into your greased pie dish.
Evenly sprinkle crumbled bacon and shredded cheddar on top.
5. Bake:
Place in the oven and bake 30–40 minutes, or until the center is set and the top is golden.
(You can test with a knife - it should come out clean.)
6. Cool & Serve:
Let it cool for about 5–10 minutes before slicing. Serve warm or cold.

• Make it your own: Add mushrooms or swap cheddar for Swiss or feta.
