Serves: 6
Ingredients:
1 tablespoon olive oil
2 pounds Beef stew meat
salt & pepper
1 teaspoon garlic powder
1 onion diced
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 pound mushrooms sliced
2 ½ cups beef broth divided
1 package Boursin cheese
8 ounces sour cream
3 tablespoons cornstarch
16 ounces egg noodles cooked
Instructions
1. Heat olive oil in a skillet over medium high heat. Season beef with salt and pepper. Add seasoned beef to skillet and sear the meat until nice and brown.
2. Place the beef, garlic powder, onions, Dijon, Worcestershire, mushrooms and 2 cups broth in a slow cooker.
3. Cook on high 4-5 hours or on low 7-8 hours or until beef is tender.
4. Combine remaining broth with cornstarch and stir into slow cooker. Cover and cook an additional 15 minutes or until thickened.
5. Stir in the Boursin cheese and sour cream until completely combined.
6. Serve over egg noodles.
