▶Ingredients
The zest of one orange
1/4 cup (50g / 1.8 oz) sugar
1/2 tsp vanilla extract
1/4 cup (65g / 2.3 oz) unsalted butter (softened)
1 cup (130g / 4.6 oz) all-purpose flour
1/4 cup (30g / 1 oz) cornstarch
A pinch of salt
1 1/2 tbsp (20ml / 0.7 oz) freshly squeezed orange juice
To start, you'll need to zest one orange and mix the zest into 50g of sugar. Rubbing the zest into the sugar with your fingertips beforehand helps to release the essential oils and make the cookies even more fragrant.
Then add 1/2 tsp of vanilla extract and 65g of softened unsalted butter, and mix until light and fluffy.
Sift in 130g of all-purpose flour, 30g of cornstarch, and a pinch of salt, and stir until the dough comes together. Add 20ml of freshly squeezed orange juice and mix until the dough forms a ball.
Roll out the dough to a thickness of about 1cm between two sheets of baking paper. Cut the dough into cookie sticks that are about 12cm long, 1cm wide, and 1cm thick, and place them on a baking sheet lined with parchment paper.
Bake the cookies for 15-18 minutes at 180°C in a preheated oven until they turn a light golden brown. Once they're done, take them out of the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
You can also drizzle or dip the cookie sticks in melted dark chocolate or milk chocolate for an extra special treat. And there you have it, delicious and fragrant orange shortbread cookie sticks that are perfect for dipping in your favorite hot beverage. Enjoy!
