(Makes about 1 standard 300ml jar)
Ingredients:
2 cups fresh or frozen strawberries
(or raspberries, blueberries, blackberries, or a mix of berries)
2 tablespoons chia seeds
1–2 tablespoons honey (to taste)
Instructions:
1️⃣Heat the berries in a small saucepan over medium heat, stir until they break down and become syrupy (about 5–8 minutes). If using frozen berries like I did, no need to thaw just cook a bit longer.
2️⃣Mash the softened berries with a fork or potato masher to your desired texture (smooth or chunky).
3️⃣Remove from heat, stir in the honey and chia seeds.
4️⃣Let sit for 10–15 minutes to thicken as the chia seeds absorb the liquid.
5️⃣Transfer to a clean jar and put in the fridge. It will continue to thicken as it chills. Keeps for up to 1 week in the fridge.
