This chunky, tangy-sweet rhubarb relish is packed with flavor and perfect for pairing with grilled meats or cheese boards.
In a large pot, combine
4 cups diced rhubarb,
1 chopped red onion,
green and red bell peppers,
1 cup apple cider vinegar,
1 1/2 cups sugar,
1/2 cup brown sugar,
and spices: mustard seeds, ground ginger, cinnamon, cloves, black pepper, and salt.
Simmer over medium heat for about 30–40 minutes, stirring occasionally, until thickened.
