Dough
2 tbsp cottage cheese, blended (I like good culture 2 % low fat)
1 tbsp milk of choice
1 tbsp maple syrup
1/2 tsp vanilla extract
1/4 cup + 2 tbsp all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
Filling
1 tbsp butter, melted
1 tbsp coconut sugar
1/2 tsp cinnamon
Icing
2 tbsp powdered sugar
1/2 tsp milk
1/4 tsp vanilla extract
Instructions
Blend the cottage cheese using an immersion blender until smooth.
Then add in the milk, maple syrup, and vanilla and mix until combined. You can also add all ingredients into a blender and blend that way.
Mix in flour, baking powder, and salt to form a soft dough. If your dough is too wet, add in 1 tbsp more of flour until you have a workable dough that isn’t sticky.
On a lightly floured surface, roll dough into a small rectangle (about 4×6 inches).
Brush with melted butter, then sprinkle with coconut sugar and cinnamon.
Use a pizza cutter to cut out 5-6 equal strips. Then roll each one into a tight log and place in an air fryer safe dish that is greased with butter or oil.
Bake in the air fryer at 330 for 6-8 minutes, or until lightly golden and cooked through. You can also bake in the oven at 350F for 10-15 minutes.
While it bakes, mix powdered sugar, milk, and vanilla until smooth. If your icing is too watery add a little more powdered sugar until you reach the right consistency.
Let the roll cool slightly, then top with icing and dig in!
