Ingredients
-6 slices thick cut bacon, diced
-1/2 small white onion, diced
-1/4 cup brown sugar
-1 tbsp ketchup
-1 tbsp apple cider vinegar
-1 tsp chili flakes
-kosher salt to taste
Method
Slowly render bacon starting from a cold pan and up to medium low heat. Once bacon is crisp, remove leaving enough fat to cook the onions. Cook down the onions, seasoning with salt until translucent.
Return bacon to pan along with brown sugar and ketchup. Stir together and bring to a simmer. Add vinegar and chili flakes and simmer on low for about 5 minutes or until thick and jammy. Store in a jar refrigerated.
