Tangy rhubarb meets sweet cookie goodness in these irresistible bars that are perfect for any occasion!
Ingredients:
- 2 cups diced rhubarb
- 1 cup sugar
- 1/4 cup water
- 1 tsp cornstarch
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1/2 tsp cinnamon
Directions:
1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
2. In a saucepan, combine rhubarb, sugar, water, and cornstarch. Cook over medium heat, stirring occasionally, until thickened. Remove from heat and set aside.
3. In a separate bowl, mix flour, oats, brown sugar, butter, and cinnamon until crumbly.
4. Press half of the flour mixture into the bottom of the prepared baking dish.
5. Spread the rhubarb mixture over the crust.
6. Crumble the remaining flour mixture over the rhubarb layer.
7. Bake for 30-35 minutes, or until golden brown.
8. Allow to cool before cutting into bars.
