- Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon sesame oil
- 1/4 cup green onions, chopped (for garnish)
- Salt and pepper to taste
Directions:
1. Place the chicken breasts in the crockpot.
2. In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, garlic, ginger, red bell pepper, onion, and sesame oil. Pour this mixture over the chicken.
3. Season with salt and pepper to taste.
4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
5. Once cooked, shred the chicken in the crockpot using two forks and stir to combine with the sauce.
6. Serve hot, garnished with chopped green onions.
