Ingredients:
- 1 box lemon cake mix
- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1 cup lemon curd
- 1/2 cup water
- 1/2 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
3. Spread the cream cheese mixture evenly across the bottom of the prepared baking dish.
4. In another bowl, whisk together the lemon cake mix, melted butter, water, lemon juice, vanilla extract, and salt until well combined.
5. Pour the lemon cake batter over the cream cheese layer in the baking dish.
6. Spoon the lemon curd evenly over the top of the cake batter.
7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
8. Let cool for a few minutes before serving. Enjoy warm or at room temperature.
