Ingredients:
- 4 large portobello mushrooms
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic glaze
- Salt and pepper to taste
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix the melted butter with the minced garlic and brush this mixture over the portobello mushrooms, ensuring they are well coated.
3. Place the mushrooms, gill side up, on a baking sheet lined with parchment paper.
4. In a mixing bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, balsamic glaze, salt, and pepper.
5. Spoon the tomato and mozzarella mixture into each portobello cap, packing it slightly.
6. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
7. Remove from the oven and garnish with additional basil, if desired, before serving.
