- Ingredients:
- 2 pounds baby potatoes, halved
- 1 packet ranch dressing mix
- 1 cup shredded cheddar cheese
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Directions:
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, combine the halved baby potatoes, olive oil, ranch dressing mix, garlic powder, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.
3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
5. Remove from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
6. Garnish with fresh parsley before serving.
