Ingredients:
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chopped cabbage
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Directions:
1. In a large pot, heat a drizzle of olive oil over medium heat. Add the ground beef, onion, and garlic; cook until the beef is browned and the onion is translucent.
2. Drain excess fat if necessary, then stir in the chopped cabbage, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
3. Pour in the beef broth and diced tomatoes, followed by Worcestershire sauce, thyme, salt, and pepper. Stir well to combine.
4. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
5. Taste and adjust seasoning if necessary before serving hot.
