Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 4 cloves garlic, minced
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, melt the butter over medium heat. Add the chopped mushrooms and sauté until they release their moisture and become golden brown, about 5-7 minutes.
3. Add the minced garlic and dried thyme to the skillet, cooking for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
4. In a mixing bowl, combine the sautéed mushrooms and garlic with cream cheese, mozzarella cheese, Parmesan cheese, salt, and pepper. Mix until well combined.
5. Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each pocket generously with the mushroom and cheese mixture.
6. Place the stuffed chicken breasts in a greased baking dish and season the tops with salt and pepper.
7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
8. Garnish with fresh parsley before serving.
