Benihana Fried Rice
Ingredients
- 1/2 cup onion
- 1 cup rice (double everything for more)
- 1/2 cup carrot
- 1/2 cup green onion + a bit for garnish
- 1 tbsp garlic
- 2 eggs
- 2 tbsp soy sauce
- 1 tsp salt or more if you’d like
- 1/2 tsp white pepper
- Fat pinch of sugar
Oil to stir fry in - peanut, vegetable or canola, do not use olive oil in a wok.
- 3 tbs softened butter
- 2 tbsp garlic
- 1 tbsp soy sauce
(Don’t use all the butter for rice, save some for another time)
In a small bowl add butter, garlic and soy sauce. Mix together well and set aside,
In a hot wok or pan add some oil and then add the onion, carrots, green onions and garlic and stir fry for a few minutes until tender crisp. Add day old rice and stir to mix. Scrape rice mixture to the side and add the eggs to the empty side. Scramble and cook. Once cooked mix it all together and add some additional soy sauce. Season with salt, pepper, sugar, a heaping tablespoon of the butt mixture and stir together again. Add in the green onion garnish and serve,
