Melt 2 Tbsp of butter in a sauce pan and add 3-4 chopped scallions. Add a pint of oysters and wait until you see the edges start to curl before adding 1/3 cup of heavy cream and approximately 2 cups of whole milk. Add kosher salt, tsp of Worcestershire sauce and a dash of cayenne pepper and garlic powder. Do not let the mixture boil or the milk will curdle. It is ready when it steams. Add fresh parsley for a pleasing presentation.
