Crust:
1/2 c. Butter, softened
1 c. Brown sugar
2 c. Flour
*Mix above ingredients in a mixer until combined and crumbly. Press into a greased 9x13 pan, lined with parchment paper. (Having it overhang the sides makes it easier to remove, but at least cover the bottom.)
1 c. Chopped pecans - sprinkle over the crust.
*Preheat oven to 350F.
Caramel and chocolate topping:
1 c. Butter
1 c. Brown sugar
2 tsp. Vanilla
2 c. Milk chocolate chips
Optional: Sea salt, extra pecans, caramel bits
*In a medium saucepan, heat the butter and sugar over medium heat until boiling. Boil, stirring constantly, for 2 minutes. Remove from heat and carefully stir in vanilla.
*Slowly and carefully pour the caramel over the top of the crust/pecans. Bake 20 minutes.
*Allow to cool 5 minutes, then sprinkle the chocolate chips over the top and leave for 10 minutes. Use a small spatula or butter knife to smooth the chocolate chips. Immediately sprinkle with a little sea salt and chopped pecans, if desired. Allow to cool.
*If desired, melt about 1/4 c. caramel bits with 2 tsp milk until smooth. Drizzle over the top of the bars and allow to set before slicing.
