These enchiladas are a family favorite! Using McCormick’s enchilada seasoning makes the sauce flavorful and simple to prepare, while black beans and lots of cheese take the filling to the next level.
Ingredients:
•1 packet McCormick Enchilada Seasoning
•1.5 cups water
•8 oz tomato sauce
•1 pound ground beef
•1 onion, diced
•2 garlic cloves, minced
•1 can black beans, rinsed and drained
•Flour tortillas
•2 cups shredded cheese (or more to taste)
Instructions:
1. Make the sauce: In a saucepan, combine the seasoning packet, water, and tomato sauce. Bring to a boil, then reduce to a simmer and let it thicken.
2. Prepare the filling: While the sauce simmers, cook the ground beef with diced onion and minced garlic in a skillet. Drain any excess fat and stir in the rinsed black beans.
3. Assemble the enchiladas: Add a few tablespoons of sauce to the bottom of a baking dish to prevent sticking. Pour about 2/3 of the sauce into the meat mixture and add a generous amount of shredded cheese. Mix well.
4. Fill the tortillas: Spoon about 3 tablespoons of the meat mixture onto each flour tortilla, roll them tightly, and place seam-side down in the prepared baking dish.
5. Top with sauce and cheese: Spread the remaining sauce over the rolled tortillas, ensuring they’re fully coated, then sprinkle with cheese.
6. Bake: Bake in a preheated 350°F oven for about 15 minutes, or until the cheese is melted and bubbly.
