INGREDIENTS:
* 3 large russet potatoes, unpeeled and scrubbed
* 1 large shallot
* 2 1/2 cups freshly grated white cheddar cheese
* 2 tsp. kosher salt
* 1/4 tsp. freshly ground white pepper
* 1 1/2 cups sour cream
RECIPE:
Wrap each potato in foil and pierce. Place in oven at 400 and bake for an hour. Once the potatoes are soft, refrigerate them overnight for best results (or put them in the freezer for about an hour or so if you’re in a rush). Then, use a box grater to grate the potatoes with the skins on. Mix the grated potatoes, cheese, shallot, sour cream, salt, and white pepper. Pour mixture into a baking dish and bake at 450 uncovered for about 30-40 minutes or until top is golden brown. Sprinkle chopped green onions on top. Enjoy!
