This MEDITERRANEAN COUSCOUS SALAD
This makes a great side dish with any entrιe. If you dont have pearl couscous on hand, you can make it with quinoa, farro, or even rice.
The dressing is simple, with ingredients you probably always stock in your kitchen.
1 cup Pearl couscous (use quinoa for gluten free)
1 cup halved cherry tomatoes
1 diced English cucumber
1/4 cup chopped parsley
1/4 red onion, sliced
1/4 cup kalamata olives
1/4 cup chopped sun-dried tomatoes
1/4 chopped basil
1 can drained and rinsed chickpeas
Dressing
2 tablespoons olive oil
Juice of one lemon
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1 teaspoon pink salt
1/4 teaspoon pepper
1. Cook couscous and drain
2. Toss everything together and serve!
