Ingredients:
3-4 boneless, skinless chicken breasts
Salt & pepper, to taste
1 1/2 cups cornstarch
3 eggs, beaten
1/4 cup canola or olive oil (for the pan)
For the Sauce:
1 cup granulated sugar
4 tablespoons ketchup
1/4 cup white vinegar
1/4 cup apple cider vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt
Instructions:
Preheat oven to 325°F. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
Place the cornstarch in a large zip-top bag, then add the chicken and shake to coat evenly.
In another zip-top bag, add the beaten eggs. Toss the cornstarch-coated chicken in the egg mixture until fully coated.
Heat oil in a large skillet over medium-high heat. Add the chicken in batches, separating the pieces as they cook. Brown the chicken until golden, then transfer to a greased 9x13 baking dish.
In a bowl, mix sugar, ketchup, both vinegars, soy sauce, and garlic salt. Pour the sauce over the chicken.
Bake for 1 hour, stirring every 15 minutes to ensure the chicken is evenly coated in the sauce.
Serve with rice or veggies for a tangy, delicious dinner!
