🥣 Ingredients:
• 1 1/2 cups warm water
• 1 Tablespoon sugar
• 2 teaspoons kosher salt
• 2 1/4 teaspoons Active Dry Yeast
• 4 1/2 cups all-purpose flour
• 1/4 cup melted butter
• 15 cups water
• 2/3 cups baking soda
• 1 large egg yolk with 1 Tablespoon water
• Course Salt for topping
📝 Instructions:
1. Combine the water, sugar, and salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 10 minutes and the mixture begins to foam.
2. Add the flour and melted butter using the dough hook attachment, mix on low until combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 5-10 minutes.
3. Remove the dough from the bowl and shape it into a ball. Return the dough to the bowl, cover with plastic wrap, and sit in a warm place for approximately 1 hour or until the dough has doubled in size.
4. Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper and lightly brush with cooking oil. Set aside.
5. Bring the 15 cups of water and the baking soda to a rolling boil in an 8-quart saucepan.
6. Turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other twice, then lift the ends and bring them to the bottom of the U. Press in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.
7. Carefully place your pretzels into the boiling water. Let boil for 30 seconds. (This step gives it the nice brown color, crisp outside, and soft inside!) Gently place on prepped pan.
8. Mix egg wash and brush onto pretzel. Sprinkle course salt on top. Bake for 12-14 minutes. Enjoy
