Ingredients:
— 3/4 cup of pumpkin purée or sweet potato purée
— 3/4 cup of peanut butter
— 2 eggs
— 1/2 cup of cocoa powder
— 1/2 cup of maple syrup
— 1/2 tsp of baking soda
— 1 tsp of vanilla
— pinch of salt
— 1/2 cup of chocolate chips (use @hukitchen for refined sugar free!)
Combine everything in a bowl & place into greased muffin tins. We used butter for our pan but you can also use coconut oil. Bake in the oven at 350° for 20-22 minutes. Check them every 10 minutes! We like ours fudgey & bake for 20 minutes.
Note: I used cupcake liner cups. I got 9 cupcakes, could have divided the 9th one up between the other 8 though. I baked them for 25 minutes in my oven.
