What you need:
1 thin skinned lemon
1 can sweetened condensed milk (400g)
3 eggs
1 cup self raising flour
That's it - baking magic is about to happen!
Wash and slice the lemom in half. Add to a cuisanart along with the condensed milk and eggs. Blend for till lemon is shredded. Add the flour and blend again until flour is incorporated. Pour mixture into a parchment paper lined loaf tin. Bake at 150 degrees for 40 minutes. Test with tooth pick to check if done. Allow to cool slightly before removing from pan.
Your kitchen is going to smell like a lemon grove! And trust me, this cake is a showstopper with just the right amount of tang and sweetness.
