ingredients
•9oz dark or semi-sweet chocolate (i use dairy free and refined sugar free)
•1 cup rice cereal (plus more if needed)
optional ingredients
•1 tbsp coconut oil (or other neutral oil)
•sea salt
instructions
1. melt the chocolate in the microwave or on the stovetop using the double boiler method, stirring frequently so it doesn’t burn. if your melted chocolate is really thick, add 1 tbsp coconut oil (or other neutral oil) to thin it out.
2. next, add the rice cereal to the melted chocolate and mix well. start with 1 cup and add more if needed.
3. pour the mixture into an 8x5 loaf pan lined with parchment paper (i like to sprinkle coarse seat salt on top!). place in the fridge until the chocolate hardens.
4. once the chocolate has hardened, remove from the fridge and slice into bars! if the chocolate is too hard to slice, allow it sit out for 10-15 minutes before slicing.
