Ingredients
1 1/2 cups rolled oats (GF if needed)
1/2 cup desiccated coconut
1 tsp baking powder
1 cup milk or plant milk
2 eggs or 2 flax eggs
1 cup of blueberries
1/3 cup sweetener (optional)
Method
Preheat oven to 180°C (350°F).
Mix all ingredients in a large bowl until well combined.
Pour the mixture into a greased muffin tray or cupcake liners.
