Crustless Potatoe Quiche
1 kg de pommes de terre / 2 lbs potatoes
600 g de crème fraîche / 2 1/2 C creme fresh
3 oignons rouges / 3 red onions
200 g de lardons / Lardons are 1/4-inch thick pieces of bacon cut from a thick slab that are typically cooked until crisp. Sub 3/4C diced bacon.
100 g de fromage / 2/3C shredded cheese
Oignons nouveaux / chopped green onions
Cuisson : 20 minutes à 200°C / Cook 20 minuts at 400F
Boil potates with skin on till tender. Pour into deep dish pie/ quiche pan. Squish down by placing pot bottom on them so they mash and make a crust. Add creme fresh to middle and smooth out. Sprinkls with red onions, bacon and shredded cheese. Bake for 20 min at 400F. Remove from oven and let sit a few minutes. Sprinkle the green onions over top and slice and serve.
