Ingredients:
- 2 lbs fresh strawberries
- 1/2 cup sugar (adjust to taste)
- Juice of 1 lemon
Instructions:
1. Wash the strawberries thoroughly under running water. Remove the stems and hull them.
2. Slice the strawberries into small pieces and transfer them to a large saucepan.
3. Add the sugar and lemon juice to the saucepan with the strawberries. Stir well to combine.
4. Let the strawberries sit for about 30 minutes to macerate, allowing the sugar to draw out the juices.
5. Place the saucepan over medium heat and bring the strawberry mixture to a gentle boil, stirring occasionally.
6. Once it starts boiling, reduce the heat to low and simmer the strawberries for about 30-40 minutes, or until the mixture thickens and reaches the desired consistency. Stir occasionally to prevent sticking.
7. As the jam cooks, use a spoon to skim off any foam that rises to the surface.
8. To test if the jam is ready, place a small amount on a chilled plate. If it thickens and wrinkles when you push it with your finger, it's done.
9. Once the jam is ready, remove it from the heat and let it cool for a few minutes.
10. Transfer the strawberry jam to sterilized jars while it's still hot, leaving a little space at the top. Seal the jars tightly.
11. Let the jam cool completely at room temperature before storing it in the refrigerator or freezer.
