A recipe devoured by kids and adults. Two layers of mashed potatoes stuffed with cooked ground meat and spinach.
Ingredients:
2 kg./4 lb. 8 oz. potatoes
1 cup chopped, washed, and drained spinach
500 g./1 lb. 2 oz. ground beef or lamb
3 onions, finely chopped
1 cup heavy cream
1 cup of breadcrumbs
1 egg (beaten)
¼ teaspoon cinnamon powder
Salt to taste
1 tablespoon butter
3 tablespoons canola or peanut oil
A dash grated nutmeg
A dash white pepper
4 tablespoons grated Parmesan
Directions:
Peel the potatoes and cut into medium cubes. Place in a large pot of boiling salted water and cook until tender, about 20 minutes.
Drain, return the potatoes to the same pot and mash well.
Mix in the cheese, heavy cream, white pepper, and nutmeg. Set aside.
Meanwhile prepare the stuffing:
Add the oil to a stockpot over medium heat, add the ground meat and cook until well browned.
Add the chopped onions and stir for 3 minutes.
Add the chopped spinach and stir cooking it until it is wilted; for about 4 minutes.
Season with salt and cinnamon and set aside.
To assemble:
Grease a large baking dish and evenly spread half of the mashed potatoes in it.
Evenly spread the stuffing, the meat and spinach, on top.
Spread the remaining mashed potatoes over the stuffing.
Brush the top with the beaten egg.
Sprinkle the breadcrumbs evenly on top.
Bake in a preheated oven to 180°C/360°F for about 30 minutes or until the top is golden brown. Delicious!
