Chocolate Truffles are coated either with chocolate vermicelli, grated coconut, or chopped nuts. Impressive, rich, and melt in your mouth.
Ingredients:
500 g./1 lb. 2 oz. semi-sweet chocolate
350 g./12 oz. icing sugar
200 g./7 oz. cream cheese
½ teaspoon vanilla extract
Suggested coatings: crushed walnuts, crushed pistachios, chocolate vermicelli, or grated coconut
Directions:
Melt the chocolate in a double boiler or microwave.
With an electric mixer beat the cream cheese on medium speed until smooth.
Add the melted chocolate, icing sugar, and vanilla extract. Mix well. Refrigerate for 15 minutes.
Shape into 2.5cm/1 inch balls.
Roll in pistachios, walnuts, chocolate vermicelli or coconut. Refrigerate.
Can be stored in the refrigerator for up to 3 weeks.
