These are a cross between a muffin and bread. I love these chocolate chip muffins right out of the oven for breakfast with a cup of hot tea. Mmmmmmm.
Ingredients:
3 ½ cups flour
2 tablespoons butter, softened
½ cup yogurt
2 eggs
2/3 cup sugar
250 g./6 oz. sweet chocolate chips for baking
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon vanilla extract
Directions:
Preheat the oven to 180°C/350F.
In a large bowl combine the flour, butter, yogurt, eggs, sugar, vanilla, baking powder, and baking soda.
Knead well to obtain sticky dough.
Add the chocolate chips evenly to the dough. Mix well.
Brush a 12 hole, medium-sized muffin pan, then lightly coat with flour.
Shape the dough into equal sized balls, roughly the size of an egg.
Place each ball in the hole of the muffin pan.
Bake for about 15-20 minutes.
