2 cups White Sugar
2 cups Flour
2 tsps Baking Soda
2 tsps Cinnamon
1 cup Vegetable Oil
4 Eggs
1 tsp pure Vanilla
A pinch of Salt
3 cups grated Carrots
1 cup chopped Walnuts (optional)
You can use raisins, cranberries or coconut (also optional)
Mix all your dry ingredients together. Beat the oil, eggs, vanilla & salt until well blended.
Combine dry & wet ingredients and grated carrots until well mixed; at this point you can add your optional ingredient.
Pour batter into four 2lb loaf pans that have been greased and floured.
Bake in a 325F oven for one to one and a half hours. Check with a cake tester or toothpick, it should come out clean.
Remove from oven and let cool completely, you should be able to remove loaves from pans easily.
I do a batch and freeze loaves in freezer bags so I always have some at the ready.
You can also use this batter to make Carrot Muffins.
