6 medium red potatoes -- peel, quartered
4 small white onions -- peel, quartered
2-3 carrots- peeled and cut into chunks
1 Can of artichoke hearts, drained well…optional
SAUCE
1/2 cup chicken broth
1/3 cup lemon juice
1/8 cup olive oil--or vegetable or canola oil
1 tablespoon Italian seasoning
salt & pepper to taste
24 ounces boned and skinned chicken breasts -- cut each in 3 chunks
Preheat oven to 400°
Pam spray a 9x13 inch baking pan, preferably a pyrex pan.
Layer in the potatoes & onions- try to keep the stem end on the onions so they don't fall apart while roasting.
Mix the sauce ingredients & pour over potatoes & onions, stir to coat well.
Bake uncovered for 30 minutes, stirring a couple of times.
Add the cubed chicken , stir to coat with the sauce.
Bake an additional 30 minutes or until chicken is cooked & browned.
NOTE: stirring frequently, continually coats the veggies & chicken with the sauce. This helps with the flavour & the browning.
Serve with a Greek salad or vegetable of choice.
Six servings--each serving is 4 pieces of potato, some onion & 3 pieces of the chicken.
