2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1-1/4 cups lightly packed brown sugar
1/2 cup butter, softened
1 large egg
1 tsp vanilla
1 tsp almond flavouring
1 cup milk
3 cups chopped rhubarb, fresh or frozen (do not thaw!)
Topping
1/3 cup white sugar mixed with 1 tsp cinnamon
Preheat oven to 350F
Grease & flour a 9x13 baking dish.
In a small bowl, sift together flour, baking soda & salt.
In a large bowl, cream together butter & brown sugar.
Add egg & mix until well blended.
Stir in vanilla and almond flavouring.
Add 1/4 of the milk & mix well. Then add 1/4 of the flour mixture & mix well. Repeat until all is added to the batter.
Stir in chopped rhubarb.
Spoon into pan & sprinkle with topping.
Bake 40 minutes, or until knife comes out clean.
Yum! Best served slightly warm, with a scoop of ice cream.
