Low Fat Ranch Chicken Salad -
uses everyday simple ingredients to create either a ranch dressing for chicken salad or a creamy dip for veggies, chips or crackers.

Ingredients
3 - 4 cups diced cooked chicken
½ cup finely diced celery
½ cup finely diced bell peppers
FOR THE RANCH DRESSING
1 cup low fat or fat-free yogurt
pinch kosher salt
1 cloves garlic, , very well minced
1 tbsp basil, , very finely chopped
3 tbsp apple cider vinegar
1 tbsp fresh dill, , finely chopped
1 tbsp Worcestershire Sauce
3 tbsp minced green onion
1 tbsp Dijon mustard
½ tbsp honey
½ tsp freshly ground black pepper
Instructions
Mix together all of the dressing ingredients and let the dressing sit in the fridge for several hours or overnight for the flavour to fully develop.
Toss the dressing with the diced chicken, celery and red peppers.
Serve on sandwiches or as a delicious addition to a mixed garden salad for a complete meal.
Notes
TIP: Strain 2 cups of yogurt for several hours in a colander lined with coffee filters and use the resulting thick yogurt in the same recipe as a delicious dip for vegetables or spread for crackers or crusty bread. A terrific party food idea.
