INGREDIENTS:
5 cups fresh rhubarb, chopped
1 3/4 cup granulated sugar, divided
1 1/2 tablespoons cornstarch
1 1/4 cup all purpose flour
1/8 teaspoon salt
2 eggs, lightly beaten
1/3 cup butter, melted
INSTRUCTIONS:
Preheat the oven to 375 degrees.
In a bowl, mix rhubarb, 1 cup sugar and cornstarch until combined.
Pour into a 8x11 inch glass baking dish, set aside.
In a bowl, combine flour, 3/4 cup sugar and salt. Then stir in the lightly beaten eggs until mixture is crumbly.
Sprinkle evenly over the rhubarb, then drizzle the melted butter over top.
Bake for 40 minutes, until top is lightly browned and rhubarb is hot and bubbly. Cool before serving.
